With a gentle pop, golden liquid and delicate bubbles slowly rise — instantly lifting the atmosphere and filling the room with joy. That very moment never fails to enchant me. Over the past two decades, I’ve gradually inspired my friends to join me in exploring the world of champagne. In 2014, I was honored to be invited by France’s only official champagne organization to become a Champagne Ambassador (at the rank of Chevalier). Ten years later, in 2024, I was privileged to be promoted to Officer, a recognition that further strengthened my passion for sharing the beauty of champagne culture.

During every happy hour or dinner gathering, friends now always ask if we should begin with a bottle of champagne. And indeed, we’ve come to believe that starting a celebration this way truly elevates the atmosphere. Start with champagne — it’s the perfect way to set a joyful tone and create a sense of occasion. For us, a gathering without champagne simply feels incomplete; that gentle “pop” and the cascade of fine bubbles always mark the start of happiness. To me, enjoying champagne is one of life’s most delightful experiences.

When it comes to tasting, I often choose between vintage and non-vintage champagnes depending on my mood, the setting, and the company. Each vintage bottle — especially those from earlier years (pre-2002) — offers its own distinctive depth, texture, and lingering finish. I love appreciating the refinement of its bubbles, noticing how temperature and time subtly change the flavors. Even the choice of glass can bring a different experience — something I love sharing with close friends on meaningful occasions.

As for non-vintage champagnes, while I enjoy some of the grand maisons, I have a particular fondness for independent grower champagnes. Their individuality, complexity, and reflection of terroir fascinate me. Many growers practice organic or biodynamic cultivation, crafting quality-driven champagnes that tell the story of their land and philosophy — valuing excellence over quantity.

I still remember my very first taste of champagne — Moët & Chandon. Back then, I only recognized a few famous labels, yet now I realize I’ve experienced over a hundred different champagnes, each with its own character and unique craftsmanship.

​

Even after all these years, every time I open a bottle and hear that cheerful pop, the joy never fades — it always feels like the beginning of something wonderful.
