The vignettes and sound of Champagne cork popping, followed by the golden fluid and fine bubbles slowly but aggressively pouring out of the bottle, creating fabulous moments of joy, are exactly what have been fascinating me!  Over the past 20 years, I have been luring my friends around me to join in on the fun of champagne appreciations. In 2014, I was fortunate to be invited by the only Champagne organization in France to become an ambassador - the Chevalier.  Every Happy Hour gathering and every dinner party I attend since, my friends would always count on me to pick a bottle or more of this infatuating bubbly beverage.   Slowly this tradition of "no Champagne, no life" has become a lifestyle where I extremely enjoy the entire experience from selection, opening, tasting, enjoying and after-tasting!

 

To share the crux of it all, in fact, the idea of selecting vintage or non-vintage champagne really depends on the mood, environment and drinking partners. Of course, each vintage champagne, especially the more dated ones (prior to the year 2002), would have its own unique taste, level and after taste.  One would be able to appreciate the delicate, wonderful bubbles and the changes in taste and texture at different times and temperatures.  Selection of the Champagne glasses has always been fun too - the shape, the crystal, all would contribute to a wonderful experience!

For general drinking purposes, I would always choose non-vintage champagne.  And on top of the famous Champagne houses, I also love independent Grower Champagnes, for their uniqueness, variation and complexity.  One can understand the uniqueness of the terroir, the year of production as well as the different Champagne regions free of the worries large Champagne houses have.  Wine farmers always farm with organic and biodynamic methods, with the objective of creating their own legacy!

 

I still remember vividly the first time I took a sip of a bottle of Moët Chandon, and that defining moment had determined for me that Champagne would be my favourite drink for life, over other alcoholic beverage choices.  When the champagne pops open, happiness radiates and multiplies!
